Sweet Potato Noodles with Cashew Butter and Spinach
Serves: 2
Ingredients
1. 2tps Oil
2. 1 Garlic Clove, minced or finely grated
3. 2cm Ginger, finely grated
4. 1tbsp Meridian Tamari Sauce
5. 2 tbsp Meridian Cashew Butter
6. 150ml Vegetable Stock
7. 2 Sweet Potatoes, spiralized
8. 2 Handfuls Baby Spinach
9. Small Bunch Chives, chopped
10. Pinch of Chilli Flakes (Optional)
Method
1. In a large frying pan or wok, heat the oil and gently cook the garlic and ginger for 1 minute.
2. Add the sweet potato and toss well.
3. Stir in the tamari, cashew butter and stock, then season.
4. Cook for 5 minutes then add in the spinach and chives.
5. Stir to wilt the vegetables, check the seasoning and serve sprinkled with a few chilli flakes.
