Thai Green Soup

Serves: 2

Ingredients

1. 500ml Water

2. 1 Carrot (100g)

3. 100g Cabbage

4. 100g Celery

5. 20g Red Pepper

6. 50g Courgette

7. 1 Spring Onion, halved

8. 1 Slice of Lemon, unpeeled

9. 1/2 Garlic Clove

10. 10g Fresh Ginger Root, unpeeled

11. 1 Slice of Chilli (10g)

12. 100g Cashews

13. 10g Fresh Coriander

14. 5ml Agave Syrup

15. 1 1/2 Vegetable Stock Cube

Method

1. Place all ingredients into the Vitamix container or high speed blender/food processor in the order listed and secure lid.

2. Select Variable 1.

3. Turn machine on and slowly increase speed to Variable 10, then to High.

4. Blend for 5 minutes or until heavy steam escapes from the vented lid (if using Vitamix).

5. Serve immediately. (Please not that if you are using a regular blender or food processor, the soup will require heating for a few minutes on medium heat until piping hot through.)
