Red Lentil and Coconut Soup

Serves: 2

Ingredients

1. 1 tbsp Olive Oil

2. 1 Small Onion, finely chopped

3. 1tbsp Fresh Ginger, grated

4. 1 Garlic Clove, minced

5. 1cup Dry Red Lentils

6. 1cup Pumpkin, peeled and cubed

7. One Third Cup Coriander, chopped

8. 2cups Water

9. Half a Can Coconut Milk

10. 2tbsp Tomato Puree

11. 1tsp Curry Powder

12. 1pinch Chilli Powder

13. 1pinch Nutmeg

14. Salt and pepper to taste

Method

1. Heat oil in a large pan, medium heat. Add onion, ginger, garlic and saute until the onion is tender.

2. Add lentils, pumpkin and coriander. Add water, coconut milk and tomato puree.

3. Season with curry, chilli, nutmeg, salt and pepper.

4. Bring to boil, reduce heat to low and simmer for 30 minutes or until lentils are tender.

5. Serve with some chopped coriander and some bread on the side.
