Maca is an ancient Peruvian root that Incan warriors were said to have consumed for stamina and endurance. It is high in fibre and has a rich, malty flavour that combines well with cacao. Its root and hypocotyl - the bulbous stem below the leafy growth - have for centuries been part of the diet and culture of people in the region. After harvesting it is slowly air dried and then milled into a powder.
